Spring Harvest 2023

The spring came and went, and with it so did the changes in our garden.

As most of the Northern Hemisphere was waiting for the last frost and just starting to prepare seedlings to be put in the ground, here in Cyprus, some of our vegetables were already starting to flower.

And so with the passing of our spring, we have picked the last salad greens from our garden.

While we were picking the last of our fresh salad, some of the lettuce plants have already gone into seed.

However, we did have a nice harvest.

One raised bed of sweet potatoes.

Some kohlrabi, which we love slicing fresh and just seasoning with some lemon and salt.

And…. oh beetroot.

We had so much beetroot that we are still harvesting it and simply cannot get enough of it’s sweet taste.

One of our favourite meals to make with beetroot is Borsch soup, and we have it at least couple of times a month while in season.

Another go to for us is grated beetroot and apple salad.

In this case, we have served it with halloumi ravioli and dwarf kale from our garden.
